Assistants of the Department of “Technology of Production and Processing of Animal Products and Cinology”, part-time postgraduate students Kompanets Ihor and Belchenko Anastasiia, underwent short-term advanced training in animal slaughter technology and post-slaughter processing of carcasses at the Konotop Meat Processing Plant.
The slaughter of animals was carried out directly at the meat processing plant as part of the research work of postgraduate student Tymchenko Oleksandr, who is carrying out a dissertation study dedicated to assessing the meat qualities of cattle of different genotypes obtained as a result of crossing the Swiss, Hereford and Belgian Blue breeds.
Conducting post-slaughter studies in production conditions made it possible to obtain objective scientific data, as well as combine the educational process with modern technologies of the meat processing industry. The results obtained and practical experience will be used in the educational process during the teaching of professional disciplines of the department and in the preparation of higher education applicants.
The research was conducted in compliance with current veterinary and sanitary requirements and modern technological standards. Conducting such activities is an example of effective integration of science, education, and production.
